Dry subji



String beans  with coconut paste

 

Ingredients :
String beans  1bundle
Zeera  1tsp
Red chili  2
Turmeric 1tsp
Coriander pwd 1tsp
 make a paste
Grated coconut  3tablespoon
Onion  chopped  1 small
Khus khus 1tsp
Preparation
Chop the string beans into very small pieces (1/2 cm) . Make the paste using the above mentioned   ingredients . Now heat the oil in a frying pan  , add  zeera, red chili ,  and string beans  one after another and sauté for some time until the beans ale little tender and all water  from the beans are released. Add the coconut paste and sauté again for some time. Add zeera powder, coriander powder and stir again .   as the vegetable is properly coated with the paste and masalas, switch off  the gas. Serve hot.

ASPARAGUS WITH Artichokes in CREAMY WHITE SAUCE

Ingredients :
Asparagus  1 bundle
Artichokes  1(bottom part)
EVOO(extra virgin olive oil) 2 tablespoons
All purpose flour     1 tablespoon
Black pepper crushed 1/2 tsp
Milk  ¼ cup
Garlic chopped 3 cloves
PREPARATION
Chop the asparagus in 2” pieces and artichoke bottom into square pieces  and blanch them for 2 minutes, run them through cold water thereafter.
In a Frying Pan Heat 1 spoon olive oil and sauté the flour for a few seconds  and add milk gradually stirring continuously. Make sure that there is no lump. Add black pepper to the sauce and the white sauce is ready .
Take another pan and heat the rest of the oil and sauté the chopped garlic for a little while and add the blanched asparagus and then the white sauce. Stir again for a minute till the sauce well coated with the vegetables. Serve hot.
